Ok who else remembers things at the most inconvenient times? For me it’s right as I’m going to sleep, while I’m driving, or when I’m in the shower. These would definitely come in handy. Here’s how it works:

Egg Free Sweet Potato Muffins
1 1/4 cup sugar
1 1/4 cup canned sweet potatoes
1 stick butter
1/2 cup of cinnamon apple sauce
1 1/2 cup flour
2 tsp. baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 cup milk
1/4 tsp cinnamon
Preheat your oven to 400 degrees F. Grease 24 muffin cups. Using an electric hand mixer beat together sugar, sweet potatoes, butter and apple sauce until smooth and blend well. Sift together flour, baking powder, spices and salt. Add alternately with milk to sweet potato mixture. Poor into muffin cups and sprinkle with cinnamon. Bake for 25 to 30 minutes. Enjoy!
Sometimes life can seem like an uphill battle. Finding help is often looked at as weak, and that couldn’t be farther from the truth. As someone who lives and copes with mental illness, I can tell you that everyone has the ability to grow and strengthen as a person. It’s not easy. It’s hard. Like it’s really, really hard. But if you put an effort in and do the absolute best that you can, you will get stronger. It doesn’t get easier, but you can get stronger. Even when you feel weak, even when you’re depressed, angry, anxious, manic, whatever it may be… you can get stronger.
Any progress is worth recognizing and celebrating. Be proud of yourself, and your accomplishments. Don’t forget to smile to let everyone know that you’re stronger today than you were yesterday.
